Recipes from Zamboanga City

Visit Zamboanga City and almost everyone tells you not to miss tasting the famous Curacha,
a hybrid crustacean that bears resemblance to the sea crab and a spiny lobster.
The name means “cockroach” in Chavacano, maybe because of its appearance.
But don’t let that unappetizing translation dissuade you from sampling this tasty crustacean, which is caught only in the seas of Zamboanga and Sulu.

1. Curacha crab cakes with white sauce

Mix curacha meat, 2 cups bread crumbs,onion, knorr seasoning in a large bowl til well combined.
stir ladys choice bacon spread,mustard,lemon juice and grated lemon rind.season with salt and pepper.stir egg to bind.
form mixture 4 inch thick patties,place remaining bread crumbs on a plate.coat curacha meat cakes with bread crumbs.
refrigerate for at least 30 mins.
in a large pan,over medium heat with 2 tbsp.oil cook the meat cakes until golden browned about 3 mins.
for the white sauce,heat oil in a pan add garlic saute for 1 minute,
add mayonaise nestle cream,orange juice sugar,calamansi juice and curry powder mix well until smooth.

What is the True Meaning of Thanksgiving

For Christians,Thanksgiving Day is much more than celebrations, turkeys and cooking pumpkin pies. It is  more than a day of food and football. In order to fully understand Thanksgiving Day, we need to understand “thanksgiving.” Thanksgiving is a lifestyle; a way of living. Thanksgiving Day is a day reserve to be grateful for all the bountiful grace our Heavenly Father has given us.

People who understand that “thanksgiving” is a lifestyle are continuously grateful. People who are ever grateful  are those who do not allow negativity in their lives. Happy people praise God regardless of their circumstances. These souls are the happiest people in the world. They are happy because they know who they truly are in Christ. The Healing Power of Onions

I have’nt tried the onions yet, but i tried the garlic! when i was in my mission, my companion had german measles- and the doctor told me that i need to toast many garlic and put it in a bowl and put it just on top of our desk inside the room – then I will not be infected by the bacteria- tand yes! it is true..there is something in the garlic that will stop the spreading of the bacteria..and so di po ako nahawaan..thanks goodness..
A friend of mine told me a story about when he was a kid he was in the hospital… & nearly dying. His grandmother came to the hospital & told a family member to go buy her a large onion & a new pair of white cotton socks. She sliced the onion open then put a slice on the bottom of each of his feet & put the white cotton socks on him. In the morning when he awoke they removed the socks. The slices of onion were black & his fever was gone. The following story that someone sent to me might have some truth in it & we are going to try it this winter. Continue reading
